Elaine’s Coleslaw


Elaine’s Coleslaw name

½ green cabbage (not Savoy)

½ onion (red, brown or white)

½ cup mild olive oil or another mild tasting salad oil

2 Tbsps. Highlander salad dressing (you have to make this, see the back of the Highlander condensed milk tin for the recipe)

100ml cream

Salt and pepper

Slice cabbage and onion very, very thinly. Add salt and pepper to taste. Pour over olive oil and toss through with your hands. Add salad dressing and toss again, finally add the cream, toss, taste and add more salt and pepper if needed.
